I'm SOOO Excited about our band! Balance!

One of the most important things at a wedding, from my personal point of view, is music, if you have good music & entretaiment, the reception is so much fun and everybody is dancing and enjoying a lot!.. So... I'm suuuuper Excited about our choice!, we were looking for a local band , that played all kinds of music , with emphasis in latin.. as our wedding is in Mexico . We found Balance Band... they are 8 members in this orchestra, I've seen them live, and they are truly awesome!!! I can't wait!!! ... I promise we will post some videos!... -
Laura, Dreams Cancun & Dreams Tulum are 2 hours away. I would suggest to either pay a taxi to have the photographer going from one hotel to the other OR renting a car for the day. I'm sorry about this, but it's nothing that cannot be fixed.. just pay a little extra for the transportation., you will be fine.

Matt and Yazming where scounting for locations all day today; they haven't found anything like Secret Jewels, that is so lush in vegetation. They went back today, and it seems that people is working trying to make the beach look nicer, so maybe we will stay there after all. I'm sooo excited that I may get my papers soon, so I can go personally and take care of business!... I found a great designer in Cancun that is going to make my dress... as I have the idea on my mind.., so I'm thrilled to know that I'm coming back home!!! YEAY!!!...

I haven't seen this videos until today at this post...and this is a great idea!!!! how FUN!!!... ... Matt and I are taking dancing lessons...at first, I was thinking, well, Matt is a "guero" (white boy).. I can't really expect much and I will be happy with anything he can do... BUT Matt is getting pretty good at it!, I'm really surprised and so excited!!!...I can't wait... I can't wait!!!...I would LOVE to do something as crazy as these... OURS will be latin though... salsa, merengue and that kind of stuff... I promise the VIDEO will be here ... -

Jordan Jordan, The best thing to do in isla is enjoying the water activities... the blue crystal clear ocean is breathtaking... (I haven't seen water like that in all the other caribbean places that I've been) So.. here are a couple of recomendations: 1.- SNORKELING Use the "cooperativa" guys (The ones that will offer the services at the dock when you get to the island). This is the "local" way to go... they have this little boats for 8 people approx.. they will take you to snorkel AND they will also take you to a beach, where they will cook the most delicious grill fish ever!... so yummi...., this "tour" will take approx 3-4 hours, and depending on the time of the year it will cost you 20-25 bucks per person... 2.FISHING! (If you like to do this... I will dig in my contact information to find the cel phone from a guy that will take you to fish... AND to snorkel in another awesome reef) 3.-RIDE THE ISLAND - The island is tiny, and it's fun to drive around, you can rent from a bicycle, a scooter or a golf cart..., the South of the island has at the very end a "clif" area, a must place to go and take some photos ..., they have a pathway to walk, it's very pretty... 4.- FOOD- Casa OZ... Best restaurant on the island..."Must to visit".... is on the south side... I'm sure any one at the island can give you directions on how to get there. And, downtown is full of little restaurants to find all kinds of food.. mexican, seafood, italian.. even arabian.. The island is a place to enjoy the ocean and relax... there's not much "party" going on at night... in downtown there are some bars, but I'm not very familiar with that part... Hope this helps!!! -

Who has a good chile relleno and/or Mexican rice recipe?

There are different ways to make them, this is my mother's recipe from central mexico, (we eat the chiles in a tomato broth) I cook them, my own formula ... don't know if I will find the good english words .. but I will try my best: A Hint is to have the Chiles perfectly clean, no skin.. no inside veins... for that you need to put the chile on to direct fire in the stove, the peel will burn, turn out black.. you will need to be turning it around, so the "burn" is even... Once it's pretty much all black (because the peel is burned) you take it off the fire and put it for a minute in a sealed plastic bag (The chile will "sweat?".. inside the bag and will make the peel easier to come off) Peel it off, doing it under the water it's easier..., you have to be careful so you don't break the skin..., very gently... just remove the peel Once it's clean, then cut it to open and take all the seeds out, and the veins aswell... (this willl make it less hot) So, once you have the chile perfectly clean, you stuff it with the cheese... It's easier to have chunks of cheese , cut them to fit inside the chile..., place it inside and close the chile back, hold it close with a tooth pick. To make the egg cover (Don't know how to say it!.. sorry...) but it's the fluffly egg... Take the whites of let's say 3 eggs... (if you are making 4 chiles...) and using the blender at max... make the whites as firm as possible..., then add the yellow part of the egg and keep blending...a little more to integrate it all... Pour some fluor on a dish, and put the chile on the fluor before passing it to the egg (this will make the egg stick on the chile) Then fry it... (You will need a pan with really hot oil ready by the time you put the chile on it...) , turn the chile all around to make sure all surface is brown and pretty... FOR THE SALSA: (I always have the salsa cooking before starting the chiles, this way its cooked by the time I hace the chiles ready to get in the salsa) In the blender: 4 tomates (IF roma tomatos then 6) a piece of onion (smaller than the size of a regular roma tomato) half of a tooth of garlic Water Blend that to make the salsa. (caldillo de tomate) In a Pot (enough to have the salsa and all the chiles in it) Heat some oil, add some sliced onions and garlic... when that's hot... add the salsa..., add salt and if you want some chicken buillon??, and some cilantro... LET that cook in medium or low fire while you make the chiles... Once you have the chiles out of the frying pan, add them to the tomate salsa... (This way, the chile will absorb all the flavors in the tomate) Let all cook for 5-10 mins and it's READY!!!!!!.... FOR THE RICE: Same preparation for a white rice (proportions of water and rice) BUT... Instead of clear water, make the "salsa de tomate"... Blend Tomates, onion & garlic.. (water) Have a pot with some oil and some garlic and sliced onion (just a little), when that is brown and pretty... add the tomate mix, and salt Then, add some green peas and carrots (cut little), Add the rice and some cilantro... Let it cook (according to the regular time rice needs...) Sorry if it's not very clear... I try!.... This is one of my favorite meals in mexican food... hope you enjoy it!!! -

I'm switthichg the boutonniere for a neckless!... I think it will do great..., and I'm doing it for all the guys, my dad, his dad, my guero... So it's a different idea -

Great news!!!...at least for us that live in playa and for anyone planning a wedding there (sorry for the folks in the south that were hitted harder) DEAN is gone!, and he just gave us a shower... Look at this photos that our asistant associate photographer Vincent took yesterday & today: PLAYA JUST RIGHT AFTER DEAN: PLAYA TODAY!!!, EVERYBODY IS BACK IN THE BEACH!!! THERE'S SOME WORK TO DO, BUT LOOK HOW PRETTY IT IS! Everybody, meet Vincent, our second shooter & associate in Playa del Carmen, looks like he's having some fun...

I go with the brazilian as well, when i first got it I told my self, O wow!, I'm 10 again!... haha!.. it's a nice feeling ! I have done both, wax and laser... both hurt soo much..., but i keep thinking this worth it, this is worth it... Take the advils, AND, I use a numb cream, in spanish the ingredients are: lidocaina & prilocaina, not sure if in english the names stay the same, I think you can get something similar at any pharmacy.. Another thing that have help me it's ICE, bring a cooler with ice on it, and put the ice on the skin for as long as you can take it, this will numb the area ... Good luck! ...

Thanks ladies, I loved this images too, it's always a challenge to be in the ocean... with the water up to the chest, so close to the action!, with all the camera gear literally in the waves!... but when looking at the photos, it seems so worth the risk! Props to Diane & William, that were up to anything!!, celebrating their love! -
William post his TTD photos on the newbies forum, and we learned that when you attached images that have to be hosted in the server's forum, it takes points away from those to watch them. Well, this photos are great, and for any one considering a TTD Session are a must..., even for those who don't it's fun to watch this images... So...
