  8. i don't know anything about calories or points, but this seems pretty healthy to me. it's damn good, regardless! Shrimp and Sweet Onion with Chiles and Avocado 6 Tbl fresh lemon juice (about 2 lemons) 3 Tbl vegetable oil ½ Tbl finely chopped jalapeno pepper (or more for spicy) 2 lbs large raw shrimp – cut in half or thirds ½ tsp ground cumin 1 lemon, sliced ¼ tsp salt 2 or 3 large ripe avocados 1 large sweet onion, diced (Vidalia, Oso..) 4 Tbl chopped fresh cilantro Tortilla chips Dressing; Whisk together lemon juice, jalapeno, cumin & salt, whisk in oil Bring water and sliced lemon to boil, add shrimp, once water boils again, remove from heat. Let shrimp stand 3 minutes, drain and then cool quickly with cold water (do not let shrimp soak in cold water – they will get soggy). Cut shrimp into thirds. Cut avocado in ¼†dice, fold gently into shrimp with dressing, onion, and cilantro.

  17. welcome to the forum! I was married in June of 07 at Caletas ... it was amazing! if you're interested, check out my review and pics in the links below. as for the stairs - there are stairs up and down from the dining area to the beach, do you think he'll have a problem with them? have you been to Caletas yet? just wondering if you are thinking he won't be able to make the stairs at all, or if the constant up and down will be a problem. hopefully he doesn't need to go up and down, and someone can fetch drinks for him! also, i think the bathrooms require some stair use - unless he just wants to use the ocean! (i didn't say that, really).
  18. oh, and for the dark bedroom furniture w/a smooth finish (we have black!) ... get used to seeing some dust! seriously you can always see some, at least in my case!
  19. i had like 60 or so, and the collapsable ones actually compact to a pretty small size - smaller than you would think.
  20. I think they're VERY cute - so don't listen to FMIL. You can tell you put a lot of work into them - and they're perfect! Don't let her rule your decisions, let her now and it will never stop! Why would she think that her approval somehow is required anyway?

  22. hot damn - nice work, Leigh! i know that if i start working out or changing something aout my diet, and don't see results - i am so much less likely to stick with it. so that's awesome motivation when you see progress!

  24. that really sucks! but i will say, anytime i've bought a house (5 over the last 10 years) i've moved fast and always made an offer within a few days of seeing it for hte first time. typically i go back to see it at least once, if not twice over the next day or so -then make an offer. the longer you look, the more you will know EXACTLY what you want and it will be easier to make that decision. good luck!
