ok i have a fetucinni alfredo recipe that i have to find but really i just kind of make stuff off the cuff... i keep this stuff in the pantry/fridge: pinenuts sundried tomatoes olives tomato pastes canned tomatoes baby spinach (use alot for salads) different pasta shapes parmesan half and half fresh basil that i grow on my window ledge various dried hers (pepper flakes, oregano, thyme, bay leaves) steve really likes when i do this..it is so easy and just uses the stuff i usually have around the house: i like to use bowtie or conchiglie pasta add olive oil ato pan and slivered garlic until garlic is golden, add some pepper flakes take leftover chicken and chop it up and cook with sundried tomatoes and some of the oil that it comes in in the pan with garlic and pepper flakes when they are heated through turn off heat and add cooked pasta, toasted sun dried tomatoes, baby spinach leaves, some chopped basil, some half and half (or cream is better) and a handful of parmesan...toss and salt and pepper to taste. it is really hearty and soo easy to make and has saved us in a pinch.

i've had pizza parties...it is pretty easy to make your own dough and sauce. you definitely need to have a pizza stone and one of those wood things to put pizza in and take it out...i think it is actually a good idea to have 2 of them...you can make the pizza on one while a pizza is in the oven and take the pizza out with the other wood thing. also, it is fun to just provide the basics...dough, sauce, cheese and have everyone bring 1 or 2 toppings.. i like: pepperoni mushrooms olives sundried tomatoes spinach grilled veggies (egg plant, zuchinni) onions peppers

leigh is absolutely right...it is about supply and demand. i was one of the lucky ones that got juan for a great deal as did ann with Leigh but they do amazing work so yes, they are going to be in high demand. they cannot do all the weddings that come their way so they have to raise their prices to make a living and not keel over from overworking... But they are still soooo worth it!!

Well bozo, I just gave you all my time walking you through the pros and cons of three different destinations and 5 different resorts at each destination in about an hour. It would have taken you days to do that research on your own. i get that all the time...a person will want me to book their wedding, get rates, pick out their resort, find info on activities, weather, etc. then ask me what i do... -

Large Weddings?

I really liked the package at Moon Palace, but they can only accommodate 50 people with that package. The other option would be to do a private reception which would be about 50.00 per person!!! Has anyone had this problem and if so what did you decide? i have booked weddings over 50 people at Moon Palace (around 60)...are you talking about the free dinner with the package because i think i have told you that they will also do a FREE private event if you book that many rooms. -
Meals for vendors????
TammyWright replied to alrager's topic in Destination Weddings in Puerto Vallarta & surrounding areas
you should definitely offer and let them decide what they want to do... i still feel like such a schmuck for not offering...i just assumed that they would know they were invited to eat. so ask each vendor what they prefer. -
my cat is too fat for it but my friend has a normal size cat and they love it

this is one of my favorite cheesecakes...so yummy!!! Quote: Wednesday, October 10, 2007 The Cheesecake Factory: White Chocolate Raspberry Truffle Cheesecake From Top Secret Recipes 1 1/2 C chocolate cookie crumbs or 20 crumbled Oreo cookies (with filling removed) 1/3 C margarine, melted 1/2 C raspberry preserves 1/4 C water 4 8oz pkgs cream cheese 1 1/4 C granulated sugar 1/2 C sour cream 2 tsp vanilla extract 5 eggs 4oz white chocolate, chopped into chunks Preheat oven to 475. Place a large pan or oven-safe skillet filled with about 1/2" of water into the oven while it preheats. This will be your water bath. Combine the raspberry preserves with 1/4 cup water in a medium microwave-safe bowl. Heat for 1 1/2 minutes on high in your microwave. Stir until smooth. Strain to remove the raspberry seeds (toss them out), then let the strained preserves sit to cool, then put the bowl in the refrigerator until later. Measure 1 1/2 cups chocolate cookie crumbs (or crush 20 Oreo cookie wafers in a resealable plastic bag) into a medium bowl. Mix in 1/3 cup melted margarine. Press the crumb into a 9" spring form pan that has been lined on the bottom and side with parchment paper. Use the bottom of a drinking glass to press the crum mixture flat into the bottom of the pan and about 2/3 the way up the side. Wrap a large piece of foil around the bottom of the pan to keep the cheesecake dry when placed in the water bath. Put the crust in your freezer until the filling is done. Use an electric mixter to combine the cream cheese wiht the sugar, sour cream and vanilla. Mix on medium speed for a couple minutes or until the ingredients are smooth and creamy. Be sure to scrape down the sides of the bowl. Whisk the eggs in a medium bowl and then add them to the cream mixture. Blend the mixture just enough to integrate the eggs. Remove the crust from the freezer and sprinkle 4 ounces of white chocolate chunks onto the bottom of the crust. Pour half of the cream cheese filling into the crust. Drizzle the raspberry preserves over the entire surface of the filling. Use a butter knife to swirl the raspberry into the cream cheese. Pour the other half of the filling into the crust. Carefully place the cheesecake into thwa ter bath in the oven. Bake for 12 minutes at 475, then turn the oven down to 350 and bake 50-60 minutes or until the top of the cheesecake turns a light brown or tan color. Remove the cheesecake from the oven to cool. When the cheesecake is cool, use the foil from the bottom to cover the cheesecake and chill it in the refrigerator for at least 4 hours. Before serving, sprinkle the entire top surface with shaved white chocolate. To serve, slice the cheesecake into 12 equal portions. Apply a pile of canned whipped cream to the top of each slice and serve.

Do you know of any resorts off hand that cater to large group weddings. I'm trying to do this really inexpensively, so we don't have to have our parents help and we don't have to go into debt. Dreams, el dorado, palace resorts...most of the larger resorts. Moon Palace would be really affordable because they do not charge an extra fee for the private event and it is all-inclusive. Dreams cancun does a nice reception at a great price. el dorado is a little more expensive but they also have beautiful events.
