I'm not sure of any actual chapels, but the Casa Magna Marriot in Cancun has a beautiful gazebo area that overlooks the beach & they do catholic ceremonies from this location (which I have heard that it is almost unheard of to be able to do a catholic ceremony outside in Cancun.) I'm not positive on the specfics, as we we were not looking to have a catholic ceremony, I just happened to read somewhere that this was something that they offered. Hope that makes sense; good luck!!!
