If you dont want a wedding factory and are looking for something more intimate, I would suggest the Omni in Puerto Aventuras. It has only 30 rooms and it seems they are willing to negotiate on prices if you are willing to haggle. For instance, you can provide your own liquor and try to negotiate on the corking fees.

Of course, this all depends on your budget!

You are right, big resorts are wedding factories. I’ve been at the Barcelo Maya Resort with 7 wedding the same day! Can you believe that!

May be you can contact an independent wedding coordinator able to propose you different options. I know Weddings Riviera Maya.

About Moon Palace: I shot a wedding there a few weeks ago. Kalena, the wedding coordinator is very sweet and professional. The resort has an amazing beach and very nice location for the reception.

I would suggest looking into Ceiba del Mar. It seems to fit your description. I am getting married there shortly and am happy to talk to you about it if you like.
