I'm guessing they left the stem a little longer and put a rock on top of it. The orchid blossoms will float. If you have a whole stem submerged they stay under

After a TON of searching it looks like you use something called floral glue to glue the stem to the bottom of the vase. There are 2 versions one is waterproof one is not so be careful which one you buy.
