I was going to suggest an Ice Cream Cart/Station. It should be relatively simple. You could go to Sam's or Costo and get lots of individually packaged treats so you don't have to mess with bowls and spoons. Though I do think sundaes in margarita glasses would be super cute!
You could also see if a local Mexican restaurant could make several large batches of sopapillas.
