A PV bride on another forum posted this info of a Party cruise. Her WC got her a rate of $40 pp of an 8hr cruise which includes: Continental Breakfast, Open Bar on board the boat, Lunch on the beach, Music for dancing, Snorkeling Equipment, Kayaks on the beach, Onboard Insurance
They also do other types of excursians.
SANTAMARIA CRUISE
Spend the day on the beautiful new SantaMaria trimaran, sipping cocktails in the warm Puerto Vallarta sunshine. You'll enjoy a continental breakfast as you pass by the skyline of Puerto Vallarta, making for some wonderful photos, on your way to Los Arcos marine park, where you'll enjoy some of the best snorkeling in Puerto Vallarta.
Then it's on to Las Animas, perhaps the best beach in all of Vallarta. You can relax in the sunshine, swim, have a drink at one of the beach bars, or enjoy beach activities such as kayaking or banana boat rides.
The last stop is the small fishing village of Quimixto. Here you'll enjoy a fully cooked lunch on the beach - your choice of fish, chicken, or quesadillas. After lunch, you can walk or rent a horse and ride to a beautiful waterfall or enjoy your time on the beach. Then it's back on the boat to continue to enjoy the non-stop drinks from the open bar on board and listen or dance to the beat of the music.
Runs: Daily from 9:30AM to 5:30PM
Duration: 8 Hours

There is also the Vallarta Adventures - Rythem of the Night Tour - I've heard great things about them, and this tour. Puerto Vallarta Sunset Dinner Cruise - Rhythms of the Night
This is also the group that is doing my wedding - sounds odd, I know! But they had so many requests to do weddings at Las Caletas that they started offering them! Anyway, I've read a ton of great reviews; but I don't know all of the details. It's basically a cruise, dinner and an show on the beach! Vallarta Adventures also offers many other excursions (scuba diving, whale watching, dolphins, etc.).

OOh Amy you so have to do this!! It sounds like so much fun. I want to do this. Does anyone know of anything like this in Cabo? It sounds absolutely perfect and I think guests will love and appreciate it.

amy, i did something like this as one of my events and it was so much fun. we had lunch instead of breakfast and it was soooo good. chicken mole, beans, rice, and macaroni salad...yummy!
