Here is a picture of the Occidental Grand Xcaret Wedding Gazebo. 
I have e-mailed the WC at the resort and have asked her to send me pictures and to tell me of my options in terms of gazebos and beach wedding area at the resort. It took her two weeks to reply to my first e-mail but in that e-mail she said that she would be sending me information. As of now I am just patiently waitting.... As soon as I hear anything I will post it. I am hoping they have other options as well, maybe another gazebo etc... This is just a candid picture that someone took while on vacation.

Thanks Tammy, from what I have heard that is not the swimable ocean part of the resort which to me seems good because you dont have to worry about people laying out on the beach in your wedding pictures but to the person that wrote the review it was a bad thing, like she was warning people, I'm not sure why.
